Ingredients

  • 1 pound B.C. spot prawns
  • 4 slices ginger sliced
  • 1 scallion smashed (crush with the back of a chef’s knife)
  • 1/2 tablespoons salt
  • 8 cups water

Preparation

  1. In a large saucepan over high heat, bring salt and water to a boil.
  2. Add scallion and ginger; boil for 1 minute.
  3. Add prawns and return to a boil.
  4. Cover and steep for 2 to 3 minutes.
  5. Strain and serve immediately with dipping sauce.

Sauce

Ingredients

  • 2 tablespoons high-quality soy sauce
  • 2 tablespoons water or unsalted chicken stock
  • sugar pinch
  • 1 serrano chili pepper thinly sliced
  • 1 teaspoon sesame oil

Preparation

  1. Combine all sauce ingredients in a small bowl.
  2. Taste for seasoning. Dilute with water if too salty.
  3. Cover and heat in microwave.
