Mix first 5 ingredients in heavy saucepan. Stir over medium heat until sugar dissolves. Increase heat and bring to boil. Reduce heat and boil gently about 25 minutes (until a spoon is coated thickly). Remove from heat. Add bourbon.
Put over ice cream, grilled bananas (cut in half lengthwise and grilled in skin), and toasted pecans.
