leg of lamb or shoulder of lamb, or other meaty cut
5 tablespoons olive oil
lemon
garlic
parsley
oregano
cumin
rosemary
salt
pepper
1/2 pounds feta cheese sliced thickly
Preparation
Wash and dry lamb. Insert garlic in small slits. Salt and pepper and sprinkle generously (very generously is even better) with herbs and spices. Mix oil and lemon juice and drizzle over the lamb. Cover and marinate for 3 hours, or more.
Preheat oven to 300 degrees Fahrenheit. Spread out sheet of parchment paper (or waxed paper) and rub with oil. Lay marinated meat on paper and arrange cheese on top. Wrap tightly in paper and then wrap once more in aluminum foil and seal.
Place in shallow pan and bake for 2-3 hours. Meat should fall off bone.
