The cake is a bit 'rich', so Sharon serves smallish rectangles which plate/present very nicely.

Cake

Ingredients

  • 2 cups brown sugar
  • 2 cups all-purpose flour sifted
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 2 teaspoons orange peel grated fresh
  • 1/2 teaspoon All Spice
  • 1 teaspoon baking soda
  • 1 cup sour cream
  • 1 egg slightly beaten
  • 1/2 cup chopped nuts (walnut, pecan, pistachio, anything!)

Preparation

  1. Pre-heat oven to 350°F.
  2. Grease 9" square pan.
  3. Combine brown sugar, flour, butter, salt, orange peel, All Spice and blend with pastry blender. Pour half of the crumb mixture into the greased pan --- spread evenly, but don’t press down hard.
  4. Combine baking soda and sour cream; add egg; pour into remaining half of crumbs; and, pour this mixture over crumbs in pan. Sprinkle with the nuts.
  5. Bake at 350°F for 40-45 minutes.

Whipped Cream

Ingredients

  • 1/2 pint whipping cream
  • 2 tablespoons icing sugar
  • 1 teaspoon orange peel grated
  • 2 tablespoons Grand Marnier or Cointreau

Preparation

  1. At least one hour before serving dessert, beat whipping cream until very stiff. Add icing sugar, orange peel and liqueur. Refrigerate at least 1 hour to blend flavors.
