Ingredients

  • 2 pound beef bones
  • 1 cup onion
  • 3 cups carrots pared and sliced
  • 2 cloves garlic chopped
  • 1 bay leaf
  • 2 pound beef short ribs
  • 1 teaspoon dry leaf thyme
  • 1/2 teaspoon paprika
  • 8 cups water
  • 8 cups cabbage shredded
  • 2 pounds canned tomatoes
  • 2 teaspoon salt
  • 1/4 cup chopped parsley
  • 3 tablespoons lemon juice
  • 2 tablespoons sugar
  • 1 pound sauerkraut rinsed and drained
  • sour cream

Preparation

  1. Place beef bones in a roasting pan.
  2. Sprinkle short ribs over beef bones.
  3. Add onion, carrots, garlic, bay leaf, thyme, paprika, and water.
  4. Bring to a boil, then reduce heat and simmer for several hours.
  5. Add cabbage, canned tomatoes, salt, parsley, lemon juice, sugar, and sauerkraut.
  6. Simmer for an additional 30 minutes.
  7. Serve hot with sour cream.
