Ingredients
- 2 pound beef bones
- 1 cup onion
- 3 cups carrots pared and sliced
- 2 cloves garlic chopped
- 1 bay leaf
- 2 pound beef short ribs
- 1 teaspoon dry leaf thyme
- 1/2 teaspoon paprika
- 8 cups water
- 8 cups cabbage shredded
- 2 pounds canned tomatoes
- 2 teaspoon salt
- 1/4 cup chopped parsley
- 3 tablespoons lemon juice
- 2 tablespoons sugar
- 1 pound sauerkraut rinsed and drained
- sour cream
Preparation
- Place beef bones in a roasting pan.
- Sprinkle short ribs over beef bones.
- Add onion, carrots, garlic, bay leaf, thyme, paprika, and water.
- Bring to a boil, then reduce heat and simmer for several hours.
- Add cabbage, canned tomatoes, salt, parsley, lemon juice, sugar, and sauerkraut.
- Simmer for an additional 30 minutes.
- Serve hot with sour cream.
