Ingredients

  • 20 tomatoes (7-10 lbs, approx)
  • 3 pounds onions
  • 3 red peppers
  • 2 green peppers
  • 1/4 cup oil
  • 1/2 cup fresh parsley
  • 2 tablespoons cumin
  • 2 teaspoons coriander
  • garlic full head
  • 15 jalapeño peppers (deseed most or will be too hot)
  • 1 cup vinegar
  • 1 teaspoon pepper
  • 2 tablespoons salt
  • 2 tablespoons tomato paste (small)

Preparation

  1. Take skin off tomatoes by submerging in boiling water
  2. Chop vegetables (use food processor if you want, but not too fine).
  3. Simmer for 1 hour until hot (15-20 minutes).
  4. Bottle / process in canner for 35-40 minutes in hot water bath (15 minutes for pints, 20 minutes for quarts).
