Ingredients

  • 20 tomatoes (7-10 lbs, approx)
  • 3 pounds onions
  • 3 red peppers
  • 2 green peppers
  • 1/4 cup oil
  • 1/2 cup fresh parsley
  • 2 tablespoon cumin
  • 2 teaspoon coriander
  • garlic full head
  • 15 jalapeño peppers (deseed most or will be too hot)
  • 1 cup vinegar
  • 1 teaspoon pepper
  • 2 tablespoon salt
  • 2 tablespoon tomato paste (small)

Preparation

  1. Chop veg. (use food processor if you want, but NOT TOO FINE)
  2. Simmer 1 hour until hot (15-20 mins)
  3. Bottle / process in canner 35-40 mins (hot water bath) 15 mins for pints, 20 mins for quarts.
