Ingredients

  • 12 cups tomatoes peeled and quartered
  • 1 cup celery chopped
  • 1/2 cup onion chopped
  • 1/2 cup green pepper chopped
  • 3 tsp salt

Preparation

  1. Simmer vegetables for 10 minutes.
  2. Pack into hot jars and process pint jars 40 minutes in boiling water bath.
  3. Makes 7 pints. For 7 quarts, double recipe and process 50 minutes.
