(Chrissy – did you know that Grandma M was a home economics and chemistry graduate of Simmons College – class of 1929, I think.)

Ingredients
- 3 cups flour sifted
- 3 tsp baking powder double acting
- 1/4 tsp baking soda
- 1 1/2 tsp salt cut back a bit, Chrissy
- 1/2 cup granulated sugar
- 1/2 cup brown sugar firmly packed
- 4 bananas small, mashed
- 1/2 cup nuts
- 1/2 cup milk
- 2 eggs
- 1/2 cup butter melted
Preparation
- Sift together flour, baking powder, baking soda, salt, and granulated sugar. Add brown sugar. Combine eggs, banana and milk and add to flour mixture. Add butter, then mix just enough to blend. (Chrissy – do not mix too much – quick breads like to be mixed just enough to get lumps out.) Fold in nuts.
- Turn into one large (10x5x3 inches) or two smaller (8x4x3 inches) greased loaf pans. Let stand 20 minutes. Bake in moderate oven (350*F) 1 hour and 5 minutes for large loaf, slightly less for small loaves. (toothpick doneness test: a toothpick inserted in center is clean when removed)
