Ingredients

  • 1 cups flour
  • 3/4 tsp salt
  • 1/2 tsp white ground pepper optional
  • 4 T cold unsalted butter cut into small pieces
  • 8 oz grated cheddar cheese
  • water

Preparation

  1. Pulse the flour, salt and pepper, then add butter and pulse until the mixture resembles coarse meal. Add grated cheese a little at a time until the mixture again resembles coarse meal.
  2. Pulse in 3 to 4 T of water, one T at a time, and only enough so the dough forms a ball and rides the blade.
  3. Remove, wrap in plastic and chill for 20 mins up to 24 hours.
  4. Roll dough out to 1/8th inch thickness directly on a baking sheet. Cut 1 inch shapes (squares, triangles or fish shape), then bake at 350 for 15-20 mins.
