Ingredients

  • 1 cup all-purpose flour sifted
  • 1 cup yellow cornmeal
  • 1/2 tsp salt
  • 1/3 cup sugar
  • 4 tsp baking powder
  • 2 eggs ( marianne sez “room temp”)
  • 1/3 cup butter melted
  • 1 cup milk

Preparation

  1. Heat oven to 425°F. Grease 8x8x2-inch baking pan.
  2. Combine flour, cornmeal, salt, sugar and baking powder in mixing bowl.
  3. Add eggs and butter to milk; beat with rotary beater until blended. Pour liquid ingredients into dry ingredients. Beat until ingredients are just blended. Do not overbeat. Pour into prepared pan. Bake 25 to 30 minutes or until top is golden brown.
