Bread and Butter Pickles

Pickles that I don't process. I always allow to stand twelve hours or more without moving to be sure the seal is complete before I do move them. I seldom have any.

Ingredients

  • 25 cucumbers medium sized cucumbers
  • 8 onions large white onions
  • 2 peppers sweet peppers
  • 5 cups sugar
  • 2 Tablespoons mustard seed
  • 1/2 teaspoon cloves
  • 5 cups cider vinegar

Preparation

  1. Slice cucumbers and onions as thin as possible. (Use old-fashioned cabbage slicer.)
  2. Combine with sliced cucumbers and 1/2 cup salt. Let stand three hours. Drain and discard liquid.
  3. Combine sugar, mustard seed, and cloves in large preserving kettle. Bring to boil.
  4. Add drained cucumbers and peppers. Heat thoroughly, but do not boil, just bring to boiling point.
  5. Pack while hot into sterilized jars and seal at once.
