Quadruple for a costco package of ground pork. Omit water and flour for GF version. Doesn’t seem to make a difference anyway!

Ingredients

  • 2/3 cups parsley leaves fresh
  • onion small
  • 910 g pork shoulder cut into 1” squares
  • 340 g pork fat cut into 1” squares
  • 2 tsp salt
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/2 tsp ground pepper
  • 2 tbsp water
  • 1/2 tsp liquid smoke optional
  • 1/4 cups all purpose flour

Preparation

  1. Metal blade in Cuisinart: mince the parsley and onion by turning the machine on and off. Reserve them.
  2. Mix the pork and fat in a bowl and divide the mixture into 3 batches. Put in batch in the work bowl and chop it by turning the machine on and off until it reaches the desired texture. Transfer it to a large bowl and repeat the process with remaining 2 batches. OR -- buy ground pork already processed.
  3. Mix parsley, onion, seasonings, water and liquid smoke with ground meat and use your hands to blend the mixture gently but thoroughly.
  4. Divide the mixture into 1# lots and roll each into a log. Wrap in plastic. Place several in zip lock bag to freeze.
