Candied Jalapeños

Ingredients

  • 2 1/2 lbs fresh jalapeños sliced
  • 1 cup apple cider vinegar
  • 3 cups sugar
  • 1/4 tsp garlic powder
  • 1/4 tsp turmeric
  • 1/4 tsp celery seed

Preparation

  1. Slice jalapeños super thin; mandolin works best - use gloves.
  2. Add everything, except the jalapeños, to a pot and bring to a boil. Once syrup boils, reduce heat and bring to simmer.
  3. Add peppers. After about 5 minutes, bring the syrup back to a boil.
  4. Reduce heat and simmer for 20-30 minutes. The longer you boil, the milder it gets.
  5. With slotted spoon, remove jalapeños and place in clean jars. Fill to 2 inches from rim.
  6. While transferring peppers, let syrup continue to simmer.
  7. Pour syrup over peppers in jars, being sure to really cover the jalapeños. Fill to brim.
  8. Seal by processing 15 mins. Keep in fridge once opened.
