Roasted Nuts

Ingredients

  • 2 cups whole almonds roasted*
  • 1 cup cashews roasted*
  • 1 cup pecans roasted*
  • 1 cup hazelnuts roasted* and skins off
  • 1 tbsp olive oil
  • 2 tbsp shallots sliced thin [use mandolin]
  • 3 cloves garlic peeled and sliced [use mandolin]
  • 2 tbsp butter
  • 1/4 cup fresh rosemary finely chopped
  • 1/4 tsp cayenne pepper
  • 1 tbsp brown sugar
  • 1 tbsp sea salt

Preparation

  1. Preheat oven to 350°F.
  2. Roast nuts briefly in a 350° oven, approx 10 minutes.
  3. Heat oil in a saucepan and sauté shallots until crispy, about 5 minutes.
  4. Add garlic and sauté for another 3 minutes. Set aside.
  5. Melt butter and pour over nuts. Add shallots, garlic, rosemary, black pepper, brown sugar, and salt.
  6. Mix well. Return nuts to the baking sheet and toast another 8-10 minutes. Allow to cool completely and serve.
  7. Allow to cool completely and store in large glass jar.
