Ingredients
2 cups
whole almonds
roasted*
1 cup
cashews
roasted*
1 cup
pecans
roasted*
1 cup
hazelnuts
roasted* and skins off
1 tbsp
olive oil
2 tbsp
shallots
sliced thin [use mandolin]
3 cloves
garlic
peeled and sliced [use mandolin]
2 tbsp
butter
1/4 cup
fresh rosemary
finely chopped
1/4 tsp
cayenne pepper
1 tbsp
brown sugar
1 tbsp
sea salt
Preparation
Preheat oven to 350°F.
Roast nuts briefly in a 350° oven, approx 10 minutes.
Heat oil in a saucepan and sauté shallots until crispy, about 5 minutes.
Add garlic and sauté for another 3 minutes. Set aside.
Melt butter and pour over nuts. Add shallots, garlic, rosemary, black pepper, brown sugar, and salt.
Mix well. Return nuts to the baking sheet and toast another 8-10 minutes. Allow to cool completely and serve.
Allow to cool completely and store in large glass jar.
