Baked Sole in White Wine

Ingredients

  • 4 cups mushrooms sliced
  • 2 cups cold cooked medium potatoes thinly sliced
  • 2 T butter
  • 1/2 t salt
  • 12 t pepper
  • 2/3 cup paprika
  • 1 cup white wine
  • 1 cup sour cream
  • fresh sole fillet shipped
  • parsley or chives

Preparation

  1. Heat oven to 375°F.
  2. Wash mushrooms, trim ends, slice lengthwise.
  3. In a buttered 12x8x2 baking dish, arrange potatoes; top with mushrooms, dot with butter; sprinkle with half of salt & pepper and half of wine over all, then spread with half of sour cream and paprika.
  4. Arrange fish over all; sprinkle with the rest of salt, pepper, and paprika; top with the rest of sour cream.
  5. Bake for 30-40 minutes or until done, sprinkle with paprika & parsley.
